Utzinger Pinot Noir White Label Butcher's Hill bright florals and mountain herbsWest Tamar fruit, hand picked, with 30% whole bunches incorporated through carbonic maceration. Cold soaked prior to a wild ferment, then pressed before dryness into predominantly old French oak. Unfined, unfiltered, sealed under screwcap. Medium burgundy red in colour. The nose shows tar and warm spice layered over fresh cherry and strawberry, with lifted red fruit aromatics and a subtle bunchy undertone. Oak influence is gentle and well integrated.
