High density planting of 7000 vines per hectare and average vine age of 25 years brings wine with great intensity. Yield between 50 and 60 hectolitres per hectare. Light fining and filtration before bottling. Gentle pneumatic press followed by settling before temperature controlled fermentation in stainless steel at 15 20C for 3 weeks. Kept on fine lees for 6
